Coconut Soup with Rice Noodle

A mild and rich taste soup which comes from coconut milk. Coconut milk is sometimes used instead of fresh cream. The coconut milk includes a lot of vitamin E. And it provides antioxidation. It is good to a person worried about anti-aging. Stir-fri sliced onion, egg plant and garlic. Add some water and seasoning. Stew it until medium fire softens ingredients with the seasoning. and add Rice Noodle. Add coconut milk. Put it in a bowl with topping of some coriander. Ingredients: Garlic Onion Egg plant Rice noodle Seasoning: Garlic sliced ginger leaf of kaffir lime lemonglass red pepper salt topping: Coriander Lime juice
