Zenzai is a Japanese traditional sweets made by boiling azuki with sugar. The adzuki bean includes a lot of vitamin B1. The adzuki bean changes intramuscular glucide into energy. It is the food which is effective for relieving fatigue and diet. Wash the adzuki bean of dried foods with water. Then put it in the pan with a lot of water and boil. When it boils, take out Adzuki bean. Wash the pan and put Adzuki bean in a pan again and boil it with water of 1.2 to 2 times of the Adzuki bean. Continue boiling it over a low heat until Adzuki bean softens. Skim off the scum that rises to the surface of the cooking water. When the water When Adzuki bean become soften, add brown sugar of same amount of Adzuki. To eat warm Zenzai is a traditional way. To add baked Mochi very popular in Japan. Cool Zenzai is also nice. When you eat cool one, you should add more sugar or honey.
