At first, make dashi sauce seasoning with soy sauce: Pour kombu and water into the pan and boil to take the soup stock. Add soy sauce and mirin (or honey) and heat to the boil again. Cut the Eggplant, then deep fried, and served in dashi sauce. Chopped leek, ginger and red pepper will be good accents.
